Is a delicious savory dish discovered
in Nice one nice warm summer. It has the shape and texture of a crêpe
or a pancake, and has the advantages of
- being different,
- lower in carbs than a wheat flour pancake,
- and gluten free.
Preparation: 35 mins
cooking time: 8 mins
For 2 people
- 1 cup chickpea flour
- 1 + 1/4 cup water
- 1 tbsp. extra virgin olive oil
- salt
- pepper
- Pour water in a bowl and then add the oil.
- Pass the chickpea flour through a sift and into the bowl.
- Mix well with the aid of a whisk.
- Add salt and pepper to taste.
- Let it rest for 30 mins.
- Pour it on a large and hot (non-stick) crêpe pan or skillet. If you don't have a large one, cook it in two batches in a smaller crêpe pan or skillet.
- Leave it for 4-5 mins. You can pop any eventual bubble to cook it evenly.
- Carefully flip it with the help of a nylon spatula and let it cook for another 4-5 mins
- Sprinkle with black pepper and serve immediately.
A cold beer will not be a bad match,
especially when served as an
appetizer on a warm sunny day...
